The Premire restaurant at the Arabella Western Cape Hotel & Spa has launched its Cape Coastal Cuisine menu on which Christian Rose showcases the Cape's flavours with ingredients and produce from the surrounding Overberg region.

Signature dishes include vineyard snails, area-farmed salmon trout and yellowfin tuna purchased daily off the Struisbaai fishing boats. Seasonal organic vegetables and herbs, extra virgin olive oil and fynbos honey are sourced from the neighbouring Hemel-en-Aarde Valley. A selection of farm cheeses from Villiersdorp, Greyton and Stanford and wines from the region complete the picture.

The Premire's launch specialty is a four-course Whole Roasted Organic Duck menu, which serves two. The meal preludes with Pan-Seared Duck Liver served with Confit Duck Risolee, Pear Fondant and Malibu Foam. The second course is a Consomm of Shredded Duck Wonton and Vegetable Pearls, followed by Duck Breast, accompanied by Butter-Poached Elgin Apple and a Ragout of Mushroom and Mange Tout in a Shallot Reduction. Raspberry and Ginger Sorbet clears the palate for Duck Leg served with Brezel and Chive Dumpling, Maple Scented Baby Carrots and Roasted Almond Jus de Lie. A trio of Lavender, Elderflower and Rose Geranium Parfait complete the meal.

The winelist includes the best of South African and regional Walker Bay and Hermanus wines. The wine list also features lesser known labels and vintage wines, and an extensive cognac / brandy and port selection. The Nebuchadnezzar Cellar invites guests to browse the wine selection, and personal wine and food pairing recommendations are made by Food and Beverage Manager, Wayne Siepman.

The restaurant seats 40 patrons and the exclusive Premire Club which seats 16, is ideal for private dining and celebratory dinners. Premire Restaurant is open to the public and hotel guests from August to June, (closed for the month of July), Tuesday through Saturday for dinners only, from 19h00 to 22h30. The restaurant is non smoking and caters for children (no infants).

The Arabella Western Cape Hotel & Spa is on the Botriver Lagoon between Kleinmond and Hermanus.

Other dining choices at the Arabella Western Cape Hotel & Spa include Jamani Restaurant which serves rustic regional cuisine and the option of dining al fresco, and the Laguna Lounge which serves light meals.
